Vegan Sausage Traybake
A perfect meal for Veganuary
Serves 6, ready in 50 minutes
Ingredients
- 2 x 750g packs Co-op frozen roast potatoes
- 2 x 325g packs Co-op Mediterranean style vegetables
- 2 tsp Co-op olive oil
- 4 thyme sprigs
- 3 tbsp Co-op Irresistible Tomato & Chilli Chutney
- 2 x 300g packs Co-op GRO Sizzlin' sausages
Method
- Preheat the oven to 200°C/fan 180°C/gas 6 and line a baking tray with greaseproof paper
- Add the potatoes and mixed veg, drizzle with the oil and sprinkle the thyme leaves over
- Season with black pepper and roast in the oven for 20 mins
- Mix the chutney with 2 tbsp hot water to loosen
- After 20 mins, add the sausages to the tray and pour the chutney all over
- Cook for a further 25 mins, until sticky and golden
