Vegan Sausage Traybake

A perfect meal for Veganuary

Serves 6, ready in 50 minutes

Ingredients

  • 2 x 750g packs Co-op frozen roast potatoes
  • 2 x 325g packs Co-op Mediterranean style vegetables
  • 2 tsp Co-op olive oil
  • 4 thyme sprigs
  • 3 tbsp Co-op Irresistible Tomato & Chilli Chutney
  • 2 x 300g packs Co-op GRO Sizzlin' sausages

Method

  1. Preheat the oven to 200°C/fan 180°C/gas 6 and line a baking tray with greaseproof paper
  2. Add the potatoes and mixed veg, drizzle with the oil and sprinkle the thyme leaves over
  3. Season with black pepper and roast in the oven for 20 mins
  4. Mix the chutney with 2 tbsp hot water to loosen
  5. After 20 mins, add the sausages to the tray and pour the chutney all over
  6. Cook for a further 25 mins, until sticky and golden
