Jude's Prosciutto Wrapped Asparagus
Ingredients

1 x 6 pack Mudwalls asparagus tips

1 pack COOP Prosciutto (6 slices in pack)

2 tbs Woo Rapeseed oil

1 good knob of Netherend butter

Juice of half a lemon

Freshly ground black pepper

Cotswold Gold white truffle oil (optional)
Directions

Cut the bottom end bit off the asparagus stalks to remove any tough, old ends. Wash in cold water

Place the asparagus into a large pan of boiling water and allow to simmer for 3-4 minutes depending on the thickness of stems

Take out and place immediately into cold water to prevent any further cooking.

Drain after 5-10 mins

Wrap the asparagus stalks tightly in the prosciutto ham

Pour the rapeseed oil on to the griddle or frying pan and place the asparagus onto the hot oil.

Turn frequently for 8-10 minutes then add the butter. Once the butter is melted, add the lemon juice and black pepper and cook for a further minute

Serve like this or with Cotswold Gold Hollandaise sauce and/or Cotswold Gold white truffle oil
