Co-op Irresistible Fairtrade Chocolate Mousse

A delicious, chocolate-y dessert - perfect to impress friends and family! As seen at the Fairer Living Festival.
Ingredients
- 180g Fairtrade Co-op Irresistible dark chocolate (1 bar = 100g)
- 25g butter
- 5 eggs (separated)
- 3-4 tablespoons caster sugar
- 150ml double cream and extra for decoration and a little grated chocolate
Method
- Put the chocolate and butter in a heatproof bowl set over a pan of barely simmering water. Push the chocolate and butter gently down with a wooden spoon to help it melt but avoid stirring. Once three-quarters of the butter and chocolate have melted, remove the bowl from the heat. Stir until melted, smooth and glossy. Set aside until lukewarm.
- Whisk the egg whites to soft peaks, then gradually add the sugar, whisking, until stiff peaks form.
- Whisk the double cream to soft peaks.
- Working quickly, use a spatula to stir the egg yolks into the chocolate mixture.
- Gently fold the egg whites and cream into the chocolate mixture, being careful not to knock out the air bubbles. Pour into wine or dessert glasses and chill for a couple of hours or overnight to set.
- When ready to serve, whip the extra cream and pipe a swirl on top and decorate with chocolate shards or grated chocolate.
