Easy Pasta Bake
Serves 2, Ready in 40 minutes
Add extra colourful veg to jazz up a jar of pasta sauce and create this tasty dish.
Ingredients
- 175g Co-op pasta
- 1 tsp Co-op olive oil
- 1/2 red pepper, deseeded and chopped
- 1 clove garlic, sliced
- 100g frozen peas
- 1/2 x 300g jar Co-op arrabbiata pasta sauce
- Small handful fresh parsley, chopped (optional)
- 1/2 x 125g ball Co-op lighter mozzarella, sliced
Method
- Preheat the oven to 190°C/fan 170°C/Gas 5
- Cook the pasta according to the pack instructions
- Drain well, retaining 2 tbsp cooking water
- Meanwhile, heat the olive oil in a large pan and fry the chopped red pepper for 5 mins
- Add the sliced garlic and frozen peas and cook for 2 mins, then stir in the pasta sauce
- Add the pasta and cooking water, then stir in a small handful fresh parsley, chopped, if you like
- Spoon into an ovenproof dish and top with sliced mozzarella
- Bake for 25 mins
