Earl Grey Granola

Enjoy this easy to make Earl Grey tea granola!
Ingredients
- 6 Fairtrade Earl Grey teabags
- 250ml Co-op maple syrup
- Pared zest of 2 lemons
- 500g jumbo porridge oats
- 150g mixed nuts, roughly chopped
- 3 tbsp Co-op vegetable oil
- 1 tsp ground cinnamon
- 125g Co-op seed mix
- 50g Co-op desiccated coconut
- 50g each dried cranberries, raisins and apricot pieces
- Co-op Greek style natural yogurt and fresh fruit, to serve (optional)
Method
- In a pan, simmer 2 tbsp water, 2 of the teabags, the syrup and zest for 2 mins, then infuse for 1 hour
- Preheat the oven to 170˚C/fan 150˚C/Gas 3
- Strain the tea mixture, reserving the zest, then combine with the oats, nuts, oil, cinnamon and reserved zest
- Spread out evenly on 2 lined baking trays
- Bake for 20 mins, then stir in the seeds and coconut
- Cook for another 20 mins
- Cool completely, then stir in the dried fruit
- Store in an airtight container, with the other teabags for extra flavour, for up to 3 months
- Serve with the yogurt and fruit, if using
