Buddha Bowls

On-trend, light and totally tasty, these are great for sharing with your friends too… just double up
Ingredients:

150g Co-op British broccoli florets, halved if large

1 tsp Co-op olive oil

30g kale, shredded

100g brown rice
-
100g Co-op frozen peas

1 cooked beetroot, sliced

1/2 Co-op British carrot, grated

Juice of 1/2 lemon

100g Co-op reduced fat houmous
Directions:

Preheat the oven to 180°C/fan 160°C/Gas 4

Toss the broccoli in the oil and tip onto a baking tray Season, then roast for 15 mins, adding the kale for the last 5 mins

Meanwhile, cook the rice according to the pack instructions, adding the peas for the last 3-4 mins

Layer the salad in a serving bowl along with the beetroot and carrot

Add the lemon juice to the houmous and stir to loosen, then drizzle over the salad to serve
