Antipasti Bites

These speedy bites are perfect for a picnic or party
Ingredients
- 100g pack Co-op German style salami
- 500g cherry tomatoes, quartered
- 3 x 125g packs Co-op mozzarella, diced
- Basil leaves, to garnish
Method
- Preheat your oven to 200°C/fan 180°C/gas 6
- Line 10 holes of a 12-hole muffin tin with a slice of salami in each
- Press the salami into the bottoms and sides to form a cup-shape
- Bake for 7-10 mins, or until crisp, then allow to cool
- Mix the tomatoes and mozzarella and season
- Once the salami cups are cool, fill with the tomato and mozzarella mix, and garnish with the basil to serve
