Almond & Coconut Bites

Five ingredients quickly blended for a snack that’s full of flavour!
Ingredients
- 40 whole almonds
- 40g raisins
- 15g desiccated coconut
- 1/2 tsp Co-op clear honey
- 1 tbsp hot water
Method
- Blitz the almonds in a food processor until finely chopped
- Add the raisins and coconut and whizz again
- Add the honey and 1 tbsp of hot water and blitz until the mixture comes together
- Roll into 6 even sized balls and chill on a plate to firm up for at least 20 mins, or preferably overnight
Top Tips
Double the ingredients for enough for 4 people
Add a little cacao powder for a chocolate flavoured version
